The Sunburst is modelled on the semi-hard Gruyére. The washing of the rind results in the ever evolving nuances of the cheese. The Sunburst is an aromatic cheese with fruity, floral tones ending with a mild nutty, mildly acidic finish. The natural rind is slightly sticky and the texture of the cheese is dense in the initial months, gradually becoming flaky as it matures. For a delightful gourmet experience, Fratelli Cheese suggest to pair this cheese with a crisp white wine and an array of nuts and fruits. It can be paired it with Sangiovese Bianco, Chenin Blanc or Chardonnay from the house of Fratelli.
