Sundried Tomato Pesto Pasta

This tasty pasta is quick, easy and exploding with flavor! You can customize it with any protein or veggies of your choice. Perfect for a weeknight dinner and even better the next day. 


For the pesto Method
  • Take a handful of basil, sun-dried tomatoes, one glove of garlic, and olive oil mixed up and grind into a smooth pesto OR if you'd like to have a readymade pesto on hand, use The Prodigal Farm's Sun-dried Tomato Pesto
  • In a pot of heavily salted boiling water, add your pasta and let it cook for 4 to 5 minutes.
  • In a pan, cooking cherry tomatoes, broccoli, and mushroom together till the mushrooms blister
  • Add cooked pasta, ¼ cup of pasta water, and the pesto 
  • Combine and serve
