Pan fried Eggplant with Red Pepper Hummus, Pomegranate, Crispy garlic and Microgreens.
Ingredients
1 Eggplant
Salt
Red Pepper Hummus
Pomegranate seeds
Crispy Garlic Chips
Microgreens
Method
- Slice the eggplant, apply salt on the eggplant and place it on kitchen towels to draw out the moisture, let it sit for 15-20 minutes, there after remove the salt and excess water with the kitchen towel.
- In a pan on medium heat, add in the olive oil, place the eggplant and let it cook till it’s golden brown.
- Once the eggplant is cooked, spread the red pepper hummus, top it with pomegranate seeds, micro greens and crispy garlic chips.
