One-Pan Couscous, Baby Chard and Herbed Chicken - so easy to make and so healthy!
Ingredients
- Chicken legs - bone in or boneless
- Baby chard
- Cous-cous
- Seasonings of choice
- Olive oil
- Lemon slices and juice
- Minced garlic
- Onion
Method

Marinate the chicken legs in salt, pepper, minced garlic, dried herbs and olive oil for at least 30 min

In the pan, add some olive oil and cook the chicken, skin side first

Once cooked, remove from the pan, add some chopped onion, minced garlic, salt and pepper. Sauté until translucent

Then add some lemon juice, and a bunch of baby chard. Sauté together

Now add Couscous and chicken stock in 1:1 ratio, cover with the lid for 3-4 min until the Couscous soaks up all the stock and fluffs up

Throw in some capers and mix everything

Serve the chicken with fresh baby chard on a bed of Couscous
